Valentines Day: Sweet Treats


For another Valentines Day themed post of my series, it would not be right if I didn’t include something sweet and scrumptious. I have prepared these delicious treats that are easy to make that requires so cooking, just chilling in the fridge. They are perfect to surprise any with these treats as they will go down a storm with anyone!

Strawberry is light, fresh with the flavour and ultimately a delectable dessert. It is that easy to make you can present it is any shape or form that takes your fancy. I particularly enjoyed these mini shot inspired glasses, which I topped of with a fresh strawberry, but you could even add a swirl of whipped cream to create a ‘Strawberries & Cream’ dessert.

Additionally these Cheesecake Truffles are just heavenly and are win with anyone that enjoys cheesecake and chocolate mixed together to create one delightful piece.

Chocolate Cheesecake Truffles Recipe:
Ingredients
8 ounces cream cheese
4 cups powdered sugar
5 ounces bittersweet dark chocolate, melted (I used 70% cacao)
1 teaspoon vanilla
Coatings for truffles:
    Desiccated Coconut 

    cocoa powder

Instructions
1.  Using a mixer, slowly add powdered sugar to cream cheese mixing well after each addition.
2. Add melted chocolate and vanilla and mix until smooth.
3. Chill several hours.
4. Shape into 1 balls.
5. Roll in coatings.
Chill, covered until ready to serve.

Strawberry Mousse Recipe:
Strawberry Mousse Filling
1 Cup Heavy Cream
2 cups sliced cleaned strawberries
½ cup sugar
1 envelope gelatin

1.In a food processor, puree 2 cups sliced strawberries and ½ cup granulated sugar until smooth.
2Transfer strawberry mixture to a small saucepan; bring to a boil over medium-high heat
  Remove from heat, and add gelatin to strawberry mixture, stirring constantly until gelatin dissolves.
  Cover and chill until slightly thickened about 30 minutes, stir the mixture every 10 minutes
4Whip cream at low speed until foamy; gradually increase speed to medium-high, and beat until soft peaks form.
5Fold whipped cream into strawberry mixture until well blended. Cover and chill 30 minutes or just until mixture has thickened enough to be used as filling
6Spread about 1 cup Strawberry Mousse between each cake layer, cover and chill 3 hours or until mousse is set.
